resins were used to seal amphorae and, later it appears, to flavour wine in antiquity. The Greek retsina – often made from savatiano, the most widely planted variety in Greece, as if it mattered – is both a survival of this and a potent example of the importance of subjectivity and circumstance in the enjoyment of wine.
