Oak it’s impossible to overstate the influence of the various species of the genus quercus that are used for the making of barrels in shaping the taste of modern booze. Few of the world’s best wines (and little of what we drink every day) would be recognisable without “new” oak. Without it, whisky would be vodka and cognac would be schnapps.
